The spread of diseases such as cancer and inefficiency and the disadvantages of treatments such as chemotherapy have led to the use of new technologies such as nanotechnology in the diagnosis and treatment of diseases. Important research in this area includes the use of nanoparticles as drug delivery to prevent damage to other tissues and cells and to treat disease. The use of protein nanoparticles in the detection and fabrication of nanosensors is one of the important applications of nanotechnology. Reasons for using protein nanoparticles include biodegradability, loading of large quantities of drugs and the possibility of mass production. To achieve all this, all the parameters affecting the process must be evaluated. For this purpose, in this paper, the effect of gelatin concentration parameters, acetone content, temperature and agitation speed on the size of gelatin nanoparticles, which is a type of protein nanoparticles, has been investigated. In order to investigate the effect of each of the input parameters, the statistical method of Sobol sensitivity analysis was used. The results showed a significant effect of the amount of acetone and a small effect of temperature and agitation speed.
