Abstract

Eggplant is ranked as one of the top ten vegetables in terms of oxygen radical scavenging capacity due to the fruits phenolic constituents. The eggplan (Solanum melongena) is a vegetable typical of the mediterranean. But is also a powerful antioxidant for which it’s a valuable ally in the prevention of major disease. Anthocyanines an important group of naturally occurring pigments of red or purple colored fruit are the main phenolic compounds in eggplant peel. Anthocyanins are molecules widely disterbuted in the plant kingdom present in glycosylated from anthocyaninas and in glycosylated from anthocyandins generally less stable. (solanum melangena) is contain of diatery fiber, nasunin, alkaloids, saponins, steroids, ascorbic acid, flavonoids, carbohydrates, tannins, and proeins. Nasunin is a major component of anathocyanine pigment of eggplant was isolated from the eggplant peel and its antioxidant activity was evaluated. Nasunin is a phytonutrient. This phytonutrient is concentrated in the peel of eggplant. This study is to determine the fertility effect of equeous extract of solanum melongena fruit extract on some reproductive variables using adult male ram. the variables studied in this research fallow: sperm motility, sperm count, sperm abnormality, sperm viability. The rang of PH extract acidity and alkalinity conditions from 5.5 to 7.
